On the weekends, I love recipes that can serve as both breakfast and brunch. Sometimes I get the chance to sleep in on the weekend so having a handy brunch recipe is always nice. But even on those weekend mornings where I can’t sleep in (which is more often than not) I still enjoy having a hearty and filling breakfast that will keep me going throughout the day. Tasty Stuffed Meatballs Recipe

Recently, I saw a recipe for stuffed meatballs… of course, I didn’t try it out right away and by the time I wanted to try it I forgot where I had seen it. But, I figured that it couldn’t be too hard to create at home. We’ve made stuffed burgers before, so I thought it would be same type of process… just smaller and not flattened. The most difficult part was figuring out what to stuff it with, but then I figured I could just do a variation of one of our favorite meatball recipes. The end result? Spinach, Pork, and Artichoke Casserole

So I mentioned that spinach kick, right? Well, here’s another recipe to add to that only this time it’s a spinach, pork, and artichoke casserole. Yes, this may have been because of my love for spinach and artichoke dip. I’m not sure what it is about the combination, but I love it. So I wanted to see how that would translate to a casserole, and a quick google search lead me to finding a chicken and artichoke casserole and with my trend to add spinach, I thought- why not. Sweet B is somewhat picky about what she’ll eat so I have yet to try this with her. Every Sunday evening, we watch the latest episode of the Walking Dead and sometimes catch up on old episodes. One of the biggest problems that we run into is finding the ideal snack for the show. We don’t do themed snacks, though that might be an option to explore for the finale. But we do tend to fall back on one snack in particular. So, we’ve been on a bit of a spinach kick lately. Personally, I love spinach and Squeaker seems to be following in my footsteps. Kyle, while he did not grow up liking spinach, has taken a liking to it as an adult. Lucky me because that means I can try out all the spinach recipes I want!
