So I mentioned that spinach kick, right? Well, here’s another recipe to add to that only this time it’s a spinach, pork, and artichoke casserole. Yes, this may have been because of my love for spinach and artichoke dip. I’m not sure what it is about the combination, but I love it. So I wanted to see how that would translate to a casserole, and a quick google search lead me to finding a chicken and artichoke casserole and with my trend to add spinach, I thought- why not.

If you enjoy spinach and artichoke dip, you should give this spinach, pork, and artichoke casserole a try.

Sweet B is somewhat picky about what she’ll eat so I have yet to try this with her. Squeaker, however, absolutely loved it… though not quite as much as the spinach, turkey, and quinoa casserole.  Anyway.. that’s the reason you’ll see ‘toddler approved’ on the recipe. So far, Squeaker will try just about anything that’s given to her and we’re hoping that trend continues.

So, back to this casserole … which was definitely inspired by my love of spinach and artichoke dip. My main concern was having a casserole that wasn’t going to be too creamy like the dip, but still with enough cheese and depth.

Our end result? Pure deliciousness.

I’m sure you could also use chicken, but we just happened to have a few leftover pork chops after making pork chops with rice and gravy.

If we make any modifications to this, it might be to add mushrooms or to see how it would taste with chicken. All in all, I would call this a delicious and successful dish that both satisfied my desire for Spinach and Artichoke Dip but also wasn’t quite as cheesy. I still got what I wanted, and to boot, the dish was delicious and filling. I think that’s one thing I really enjoy about casseroles- depending on what goes into them, you have a complete meal. Maybe add a simple salad and you’re good to go.
