One of the Pillars of our Afterschooling

Pillars of Our Afterschooling As we’re continuing to refine our afterschooling program with Sweet B in terms of supplements and other things, I felt that it was high time that I should talk about one of the pillars of our afterschooling program. One of the reasons I wanted to start afterschooling with Sweet B was to increase her literacy and fine motor skills. Fine motor skills have always been a big area of hers as far as what to work on and literacy is close behind. It’s difficult to measure her literacy since she’s non-verbal but she has shown improvements over the past few years. She’s still nowhere near peers of her age and developmentally is around 6 or 7 years of age. This…

Chicken and Quinoa Casserole

Chicken and Quinoa Casserole (hearty and healthy) My ex was a very picky eater, so convincing him to try something like quinoa just wasn’t going to happen. And if I suggested something like a broccoli and chicken casserole? Forget it. So, when I suggested trying this next recipe to Kyle, I wasn’t sure how it was going to go over. Sure, he’s been a lot more open to trying things and hasn’t said no to anything I’ve suggested. But this, I thought, might be pushing it because it was a chicken and quinoa casserole. Personally, I love quinoa but hadn’t cooked with it too much in the past few years because I was the only one eating it. Then, I came across a delicious casserole…

Spinach, Sausage, and Turkey Meatballs

Delicious Spinach, Sausage, and Turkey Meatballs This past weekend being the super bowl, Kyle and I were looking for something easy to make that would be ready in time for the big game. Sundays are usually low key for us, but since his boys get dropped off to their mom on Sunday afternoon, sometimes figuring out something to make for dinner can be a bit tricky. I’m all for an easy meatball recipe and after seeing a recipe for Sausage and Turkey Meatballs from Wife, Mom, Geek- I decided that this was something I needed to make. And did I mention that we also put bacon in ours? We always put chopped bacon in our meatloaf recipes, so since this was similar to that in…

Children’s Dental Health Month

14 Days of Valentines will resume on Saturday as I want to get to a few other things before that. Plus, I’m still working on a few things for my 14 Days of Valentines series, so I want to make sure that I have all of that together before we delve back in. In the meanwhile, February is a special month. Aside from being my birth month, there are quite a few special things about February that we’re going to cover this week. For example, did you know that February is National Children’s Dental Health Month here in the United States? With all of the sweets being consumed this month for Valentine’s Day, plus the runoff from Christmas (we still have candy canes laying around);…
