Bacon and Squash Pancakes
Summer squash season will soon be here but don't let that stop you from making these tasty bacon and squash pancakes anytime of the year.
- 1 onion sauteed and chopped
- 1 large egg
- 2 cups of summer squash shredded
- 6 pieces of bacon baked and chopped
- 1/2 cup of Parmesan cheese
Begin by heating a large pan with vegetable oil- enough to fry your pancakes. I don't measure this so I'm not sure on exact measurements, sorry!
In a medium to large sized mixing bowl, combine all ingredients. You may want to strain your squash with paper towels to decrease the moisture.
Form the mixture into palm sized balls and then flatten to form a pancake
Fry until golden brown
