Are you a seafood lover? I confess, as I was growing up, I was definitely a seafood lover. When we lived with my grandparents for a year, one thing that I will fondly remember is having salmon belly with a cold sesame and spinach salad for dinner every week. Then, as I got older, seafood remained a constant part of my diet. Usually it was salmon because that was my favorite but I also expanded my seafood borders to things like sea bass, tilapia, flounder, and fresh sashimi. I also like my share of shellfish like shrimp or crawfish and I will not say no to crab or lobster. But, as an adult, my contact with seafood started to dwindle as I was the only one who really ate it. It just didn’t make sense to me to make it when I was the only one eating it. But, looking back- maybe I should have been a little selfish.
Now, I won’t turn down the opportunity and the end result is a dish of spinach and salmon Alfredo that both Squeaker and I devoured.
Originally, I was going to serve this over quinoa but I figured it was all going to get mixed together anyway, so I ended up combining them together.

One of my least favorite things about cooking with fish is the smell, but I didn’t have that problem here.

All it takes is a few folds, pop it into the oven and you are ready to eat! While you’re waiting for your fish to cook, you can prepare side dishes or the rest of your meal like I’ll share with you.
This particular flavor is pesto because I thought it would pair perfectly with a homemade Alfredo sauce and spinach.

I used some garlic salt and pepper to taste but not too much because of the Pesto and the cheese.
