Is it possible for cookies to be healthy? Absolutely! Breakfast cookies are sold in coffee shops and stores, and depending on the ingredients, I definitely think a healthy cookie is possible. I’ve made chocolate chip, avocado cookies in the past and chocolate chip, banana, avocado, and oat muffins. I devoured those for breakfast as much as I did a mid-day snack. I personally love avocado and I’m just as content to eat them right out of the skin with a spoon as I am to put them in a recipe. Recently, I searched for a twist on the chocolate chip cookie and one really stood out to me by using zucchini as well. So I put this healthy cookie recipe to the test, added my own touch, and came up with a new healthy cookies recipe.
Now, while you may not be able to convince the traditional chocolate chip cookie lover to give these a try, trust me- they are delicious. After waiting for them to cool (not quite patiently, I might add), I had three. Normally, when it comes to chocolate chip cookies… it’s no holds barred. I do love my Snickerdoodles (my personal favorite cookie) but sometimes I really just want a chocolate chip cookie.
They aren’t overly sweet but they are somewhat on the filling side.
And they’re healthy, mostly.
So what goes into these tasty morsels?
Well, we start with basic chocolate chip cookie ingredients: flour, brown sugar, white sugar, salt, baking soda, and chocolate chips. I added oats, but you can leave those out if you’d like.
For the wet ingredients, normally I use butter but this is where the avocado comes in: eggs, vanilla extract, grated zucchini, one mashed avocado
The end result is a delicious, moist, cookie. The recipe yields 24 cookies total and the cookies should be stored in an airtight container.
I think the oats really gave it a nice texture and the zucchini gave it that moist bite. So, if you’re more of a crunchy cookie fan, this recipe might not be for you. But, I would still encourage you to give it a try because I thought it was delicious.
I enjoyed this healthy cookies recipe for breakfast, as a mid-day snack, and even for dessert.
