Chicken and Egg Soup

One of our favorite things to have during this time of the year and in Winter is soup. Especially the next day so we always make a big batch of it. Sometimes there’s just nothing like a bowl of homemade soup on a chilly fall or winter day. And one of our favorites is a twist on classic chicken soup. Adding in eggs, cheese, and spinach- this protein packed soup becomes a great breakfast as well. When I was pregnant with Squeaker, some days this was all that I could keep down. Try this tasty chicken and egg soup with your family tonight and let me know how it goes! You can also add in peas but the past couple of times we’ve made this,…

2 Ingredient Pumpkin Fudge Brownies

I may or may not have mentioned my love for all things pumpkin. And I’m sure that I’ve mentioned that I do have a bit of a sweet tooth. I’m still on a mission to cut back on my sugar intake, so I don’t indulge in a lot of desserts or candy. I treat myself occasionally and I have definitely noticed the difference in my overall health. I’ve also noticed the difference when I go on a bit of a binge. But with this being the season for all things pumpkin, I wanted to try out a brownie recipe. Now, as much as I do like baking from scratch, there are also times that I enjoy the convenience of a boxed mix. Maybe it’s not…

Pork Marsala Casserole

Recently we’ve taken to using pork in our recipes instead of chicken. I enjoy cooking with pork and I find it to be an incredibly diverse meat that won’t quite break the bank like beef. While I haven’t tried substituting it in any red meat based recipes, I’m finding that it does substitute nicely in chicken recipes. We have tried it out most recently in a Marsala and came up with a pork Marsala casserole.  The tastes was a bit more rich and hearty than with a chicken Marsala, but still delicious none the less. One of our go-to meals is a simple pork chops with rice and gravy dish. Everything is prepared in one pan, except for the rice, so the end result is…

Easy Cookies and Cream Milkshake

I have received information and materials from McNeil Nutritionals, LLC the makers of LACTAID®. The opinions stated are my own. This is a sponsored post. Have I ever mentioned that I’m lactose intolerant? I get this from my mom’s side of the family and most of my family members on that side are also lactose intolerant. We think it’s a hereditary thing from being Asian. And it’s actually quite common. Lactose is a type of sugar found in milk. The enzyme lactase is needed to digest this sugar properly. People with a lactose intolerance don’t make enough of this enzyme. Pretty simple, right? But this pretty simple thing can prevent those with lactose intolerance from enjoying a lot of dairy based products. And for me,…

Tasty Stuffed Meatballs Recipe

Recently, I saw a recipe for stuffed meatballs… of course, I didn’t try it out right away and by the time I wanted to try it I forgot where I had seen it. But, I figured that it couldn’t be too hard to create at home. We’ve made stuffed burgers before, so I thought it would be same type of process… just smaller and not flattened. The most difficult part was figuring out what to stuff it with, but then I figured I could just do a variation of one of our favorite meatball recipes. The end result? A tasty and easy meatball recipe that is sure to be on our rotation. I also ended up making a few regular meatballs with the filling mixed…
