I have a fondness for easy recipes, especially ones that I can prepare and eat in less than an hour. Even better when I can sneak in something healthy and I get a triple win when they come out toddler approved. This easy, creamy kielbasa and cauliflower casserole fit the bill on all accounts. I was almost going to call it a mac and cheese, but I wasn’t sure on semantics. Even though I’m fairly certain there’s no hard set rule that a mac and cheese needs to have elbow macaroni noodles. I love French toast though I don’t make it too often. It’s not that it’s too much of a process, just that I don’t always feel like standing in front of the stove and babysitting my breakfast. Recently though, I discovered a few recipes for baked French toast. My interest was peaked because it looked like the ideal way to make it. So, I decided to try it with chocolate milk and ended up with an easy baked chocolate French toast recipe. Next time I do this, I’ll probably try a different bread but I just wanted to use what we had on hand. Recently, I had tried out a recipe for deviled eggs (one of my personal favorite appetizers) and instead of using mayo, the recipe called for avocado. Now, I’m a huge fan of anything with avocado in it so I thought- why not give this a try. The end result was a tasty treat so I had to reason that if it worked with deviled eggs, it should also work with egg salad. Same process, just different application.
