Spinach and Artichoke Dip

Every Sunday evening, we watch the latest episode of the Walking Dead and sometimes catch up on old episodes. One of the biggest problems that we run into is finding the ideal snack for the show. We don’t do themed snacks, though that might be an option to explore for the finale. But we do tend to fall back on one snack in particular. I love a good spinach and artichoke dip and after trying several recipes, I think we finally have our favorite. One of these days, I’ll be brave enough to use fresh artichokes, but I’m still trying to get the hang of cooking those first and then using them for the dip or whatever else we need them for. This most recent…

Turkey, Quinoa, and Spinach Casserole

So, we’ve been on a bit of a spinach kick lately. Personally, I love spinach and Squeaker seems to be following in my footsteps. Kyle, while he did not grow up liking spinach, has taken a liking to it as an adult. Lucky me because that means I can try out all the spinach recipes I want! So, when I wanted another opportunity to cook with quinoa I googled and found a recipe that was right up my alley. With a few modifications and we had a tasty turkey, quinoa, and spinach casserole. Not that the original wasn’t tasty, but we wanted to make our own modifications to it. You can find the original recipe on iFoodReal. So, yes… delicious and tasty. Also hearty and…

Tex Mex Inspired Casserole

Tex Mex Inspired Casserole Easy to Make and Easy to Modify Since I completely missed yesterday’s Meal Planning and recipe share, I’m posting this today. This is something that I originally saw in Better Homes and Gardens but has since become something that we turn to often. We’ve tried making this with both ground beef and with ground turkey and while the ground turkey does hold its own, we prefer the ground beef. Alternately, you could use a meat substitute of your choice if you want to turn this into a more vegetarian friendly meal.

Chicken and Quinoa Casserole

Chicken and Quinoa Casserole (hearty and healthy) My ex was a very picky eater, so convincing him to try something like quinoa just wasn’t going to happen. And if I suggested something like a broccoli and chicken casserole? Forget it. So, when I suggested trying this next recipe to Kyle, I wasn’t sure how it was going to go over. Sure, he’s been a lot more open to trying things and hasn’t said no to anything I’ve suggested. But this, I thought, might be pushing it because it was a chicken and quinoa casserole. Personally, I love quinoa but hadn’t cooked with it too much in the past few years because I was the only one eating it. Then, I came across a delicious casserole…

Spinach, Sausage, and Turkey Meatballs

Delicious Spinach, Sausage, and Turkey Meatballs This past weekend being the super bowl, Kyle and I were looking for something easy to make that would be ready in time for the big game. Sundays are usually low key for us, but since his boys get dropped off to their mom on Sunday afternoon, sometimes figuring out something to make for dinner can be a bit tricky. I’m all for an easy meatball recipe and after seeing a recipe for Sausage and Turkey Meatballs from Wife, Mom, Geek- I decided that this was something I needed to make. And did I mention that we also put bacon in ours? We always put chopped bacon in our meatloaf recipes, so since this was similar to that in…

Slow Cooker Shredded Chicken Risotto

After Thanksgiving, while we were trying to figure out how to use up all that leftover Turkey, of course I turned to Pinterest for ideas. Because, why not? I go there for daily inspiration anyway, so I thought it would be a great starting point. After getting extremely sidetracked with all of the cute DIY Christmas idea, I turned to my trusty friend google. Somehow, the thought to make a risotto got into my head and I found one for a turkey and mushroom risotto made in the slow cooker. Perfect! It came out wonderful and I thought why not try to duplicate that by making a slow cooker shredded chicken risotto. This recipe is also very budget friendly, with the priciest item being the…
